Academic Details : I am Rohit Upadhyay, PhD scholar in the dept. of Agriculture & Food Engineering, IIT Kharagpur. I joined this institute as Senior Research Fellow (SRF) in July 2012 under Prof. H.N. Mishra.
I am post graduate (M.Sc) in Food Technology from CFTRI, Mysore. I completed my masters in year 2010. I graduated (B.Sc-Honors) in Biomedical Sciences from University of Delhi in the year 2008.
My broad area of research is Food chemistry. I am working on natural plant extracts to elucidate their antioxidant potentials and their ability in extending the shelf life of lipid based food systems, thus their efficacy in replacing synthetic antioxidants.
Previous Experience :
1. Worked as Junior Research Fellow (JRF) at Banaras Hindu University for the period of 6 months (Nov, 2011-April, 2012).
2. Worked as Food Regulatory Affairs Officer at Nestle India Ltd., Gurgaon for the period of 1 year (July, 2010-July, 2011).
Area of Work : Evaluation of Antioxidant Potential, Synergistic Behavior and Stability of Rosemary & Sage Extracts
My work involves assaying the antioxidant potential of herbal extracts and their application as natural antioxidants by assaying their capability to provide oxidative stability to fats, oils and lipid based food systems.
